High altitude adjustments by John Pammant

 

Tecate Ranch Whole Wheat bread

  • 1 ½ cups + 4 Tablespoon of water
  • 3 Tablespoon canola oil
  • 1 Tablespoon Honey
  • 1 Tablespoon Molasses
  • 3 ¼ cups wheat flour
  • ½ cup wheat bran (or try oat bran or wheat)
  • 2 ½ Tablespoon Vital wheat gluten
  • 1 Tablespoon poppy seeds
  • 2 Teaspoon Salt
  • ¾ Teaspoon yeast

 

Flax Seed Whole wheat 1 ½ lb loaf

  • 1 1/3 cups + 2 Tablespoon water
  • 2 Tablespoon canola oil
  • 2 cups bread flour
  • 1 cup whole wheat flour
  • ¼ cup nonfat dry milk
  • 2 Tablespoon Flax seed
  • 1 Tablespoon vital wheat gluten
  • 2 Teaspoon salt
  • ½ Teaspoon yeast
