INGREDIENTS

  • 1/2 Cup Extra virgin olive oil
  • 3 tablespoons Fresh lemon juice
  • 3 tablespoons Dried oregano
  • Cracked pepper
  • 3 Cups Romaine lettuce
  • 4 Tomatoes
  • 1 Large Cucumber ; Peeled, seeded & cut into wedges
  • 1 Red onion ; Thinly sliced into rings
  • 2 Celery ribs ; Thinly sliced across stalk
  • 2 Small Green peppers ; Seeded, thinly sliced crosswise into rings
  • 1/2 pound Feta cheese
  • 20 Kalamata olives
  • Capers

INSTRUCTIONS

Make dressing: stir together olive oil, lemon juice, oregano, cracked pepper to taste & garlic. Set aside.

In large bowl , combine greens, tomato, cucumber, celery, onion & bell pepper. Drizzle the dressing over the top.

Toss gently to mix.

Sprinkle Feta cheese, capers & olives over the top & serve.
