INGREDIENTS
- 1/2 Cup Extra virgin olive oil
- 3 tablespoons Fresh lemon juice
- 3 tablespoons Dried oregano
- Cracked pepper
- 3 Cups Romaine lettuce
- 4 Tomatoes
- 1 Large Cucumber ; Peeled, seeded & cut into wedges
- 1 Red onion ; Thinly sliced into rings
- 2 Celery ribs ; Thinly sliced across stalk
- 2 Small Green peppers ; Seeded, thinly sliced crosswise into rings
- 1/2 pound Feta cheese
- 20 Kalamata olives
- Capers
INSTRUCTIONS
Make dressing: stir together olive oil, lemon juice, oregano, cracked pepper to taste & garlic. Set aside.
In large bowl , combine greens, tomato, cucumber, celery, onion & bell pepper. Drizzle the dressing over the top.
Toss gently to mix.
Sprinkle Feta cheese, capers & olives over the top & serve.
