RHUBARB CAKE

  • 1 - 1/2 c. sugar
  • 1 egg
  • 1/2 c. shortening, butter or margarine

Mix together and add:

  • 1 c. sour milk (To sour milk, add 1 T. vinegar to 1 c. milk)
  • 1 tsp. soda (Mixed into milk)
  • 2 c. raw rhubarb, cut in pieces
  • 2 - 1/2 c. flour
  • 1/2 tsp. salt
  • Chopped nuts (optional)

Pour into 9 X 13 in. pan and sprinkle top with mixture of 2 T. sugar and 1 tsp. cinnamon. Bake 30 min. at 350 degrees.
